Ingredients
  

  • cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon optional
  • 1 large egg
  • ½ cup buttermilk
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat to 375°F and prep the mini muffin tin with liners or light grease.
  • Whisk the dry ingredients until smooth and free of lumps.
  • Mix the wet ingredients in a separate bowl until creamy and uniform.
  • Combine wet and dry, stirring gently and folding in blueberries without overmixing.
  • Fill each muffin cavity ¾ full to allow room for rising.
  • Bake 15 to 18 minutes until golden and a toothpick comes out clean.
  • Make a simple glaze and drizzle it over the warm fritter bites so it sets softly.
