Baked Blueberry Fritter Bites are soft, tender blueberry bites baked in a mini muffin tin, lightly glazed for sweetness, and ready in minutes. A quick, family-friendly treat perfect for breakfast, snacks, or gatherings.
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon optional
- 1 large egg
- ½ cup buttermilk
- ¼ cup melted butter
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1 cup powdered sugar
- 2 to 3 tablespoons milk
- ½ teaspoon vanilla extract
Preheat to 375°F and prep the mini muffin tin with liners or light grease.
Whisk the dry ingredients until smooth and free of lumps.
Mix the wet ingredients in a separate bowl until creamy and uniform.
Combine wet and dry, stirring gently and folding in blueberries without overmixing.
Fill each muffin cavity ¾ full to allow room for rising.
Bake 15 to 18 minutes until golden and a toothpick comes out clean.
Make a simple glaze and drizzle it over the warm fritter bites so it sets softly.
