Baked Beef Meatballs Potatoes and Mushrooms in Tomato Sauce is a one pan oven meal featuring tender meatballs, hearty vegetables, and a rich tomato sauce baked together until comforting and satisfying.

Ingredients
  

For the Meatballs

  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan
  • 2 garlic cloves minced
  • 1 pound ground beef
  • 1 large egg
  • 2 tablespoons parsley chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning

For the Vegetables and Sauce

  • pounds potatoes peeled and cut into chunks
  • 8 ounces mushrooms halved or sliced
  • 2 cups tomato sauce or crushed tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper to taste

Instructions
 

  • Preheat the oven to 375°F and lightly grease a large baking dish.
  • Mix breadcrumbs, Parmesan, garlic, ground beef, egg, herbs, and seasonings, then shape into medium meatballs.
  • Toss potatoes and mushrooms with olive oil and seasoning in the baking dish.
  • Pour tomato sauce over the vegetables and place meatballs on top.
  • Cover with foil and bake for 35 minutes.
  • Uncover and bake 15 to 20 minutes more until meatballs are cooked through and potatoes are tender.
  • Rest briefly, garnish if desired, and serve hot.
