Baked Apples With Blue Cheese And Honey

These tender apples, stuffed with blue cheese and walnuts, are a unique treat that’s easy to make and bursting with flavor.

Ingredients
  

  • 4 large apples honeycrisp or granny smith
  • 2 tbsp unsalted butter melted
  • ¼ cup chopped walnuts or pecans
  • 3-4 oz blue cheese crumbled
  • 2 tbsp honey plus extra for drizzling
  • ½ tsp ground cinnamon
  • Fresh thyme optional, for garnish

Instructions
 

  • Preheat oven to 350°f (175°c). Grease a baking dish lightly.
  • Core apples, leaving bottoms intact for filling. Brush with butter and season with a pinch of cinnamon.
  • In a bowl, mix nuts, blue cheese, honey, and ground cinnamon.
  • Fill apples with mixture, packing gently.
  • Cover baking dish with foil and bake for 25 min. Uncover for the last 10 min to brown.
  • Drizzle with honey, garnish with thyme (optional), and serve warm.
