Flatten ground chuck in a bowl. Season with salt, pepper, and garlic powder. Chill for 20 minutes to firm up and develop flavor.
Cook chopped bacon in a skillet until crispy. Remove and drain half the fat. Sauté onion for 10 minutes, add garlic and cook 4–5 minutes more.
Return bacon, then add brown sugar, bourbon, vinegar, and maple syrup. Simmer 10–15 minutes until thick and jammy. Set aside to cool.
Preheat griddle to medium and grease. Cook patties 4–6 minutes per side. Add cheese after flipping and cook until melted and internal temp hits 160°F (71°C). Rest briefly.
Toast buns cut-side down on griddle until golden, 1–2 minutes.
Layer bottom bun, cheesy patty, a spoonful of bacon jam, and top bun. Slice and serve.
