Avocado Sushi Cake

With vibrant layers of sushi rice, fresh fish, and creamy avocado, Avocado Sushi Cake is perfect for dinner parties, special events, or creative family meals.

Ingredients
  

  • 2 cups sushi rice cooked and seasoned
  • 2 ripe avocados thinly sliced
  • ½ lb sashimi-grade tuna or salmon cubed or sliced
  • 1–2 wraps nori dried seaweed sheets
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 3 tbsp Japanese mayonnaise
  • Sesame seeds or everything bagel seasoning for garnish
  • Soy sauce and wasabi for serving

Instructions
 

  • Cook sushi rice as per package instructions. Mix rice vinegar, sugar, and salt, then stir into warm rice. Let cool.
  • Prepare fish by slicing or cubing. Thinly slice avocados. Line a tube cake pan or springform pan with plastic wrap.
  • Press a thin layer of sushi rice firmly into the pan. Add a layer of nori (cut to fit), followed by fresh fish, avocado, rice, nori, fish, and avocado.
    End with a final layer of rice.
  • Spread Japanese mayonnaise on top. Arrange avocado slices in a circular pattern.
  • Chill for 15–20 minutes. Carefully remove the cake from the pan, sprinkle with sesame seeds or everything bagel seasoning.
  • Slice like a cake and serve with soy sauce and wasabi.
