Avocado Mushroom Toast
A creamy avocado spread topped with garlicky, tamari-sautéed mushrooms on crisp sourdough toast. Quick, nutritious, and full of earthy, savory flavor.
Mushrooms
- 8.8 ounces chestnut mushrooms cleaned and sliced
- 1 clove garlic crushed
- 1 tablespoon extra virgin olive oil
- 1 tablespoon tamari sauce
- 2 tablespoons fresh thyme leaves
- Freshly ground black pepper to taste
Avocado
- 1 ripe avocado
- Juice of ½ lemon
- Pinch of sea salt or pink Himalayan salt
To Serve
- 2 slices sourdough bread or preferred bread
Heat olive oil over medium heat, sauté garlic 1 minute. Add mushrooms and tamari; cook 8–10 minutes until tender. Stir in thyme and season with black pepper.
Mash avocado with lemon juice and a pinch of salt until smooth.
Toast bread until golden. Spread avocado on each slice, top with mushrooms, and serve immediately.
