Avocado Mushroom Toast

A creamy avocado spread topped with garlicky, tamari-sautéed mushrooms on crisp sourdough toast. Quick, nutritious, and full of earthy, savory flavor.

Ingredients
  

Mushrooms

  • 8.8 ounces chestnut mushrooms cleaned and sliced
  • 1 clove garlic crushed
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon tamari sauce
  • 2 tablespoons fresh thyme leaves
  • Freshly ground black pepper to taste

Avocado

  • 1 ripe avocado
  • Juice of ½ lemon
  • Pinch of sea salt or pink Himalayan salt

To Serve

  • 2 slices sourdough bread or preferred bread

Instructions
 

  • Heat olive oil over medium heat, sauté garlic 1 minute. Add mushrooms and tamari; cook 8–10 minutes until tender. Stir in thyme and season with black pepper.
  • Mash avocado with lemon juice and a pinch of salt until smooth.
  • Toast bread until golden. Spread avocado on each slice, top with mushrooms, and serve immediately.
