Autumn Comfort Soup Recipe

This hearty vegetable Autumn Soup is a comforting and nutritious dish, perfect for a cozy night in.

Ingredients
  

  • 400 g tomatoes chopped
  • 400 g chickpeas
  • 2 carrots
  • 1/2 zucchini
  • 3 mushrooms
  • 2 potatoes
  • Seasonings of choice
  • 600 ml low sodium stock

Instructions
 

  • Peel and chop all vegetables.
  • Wash all vegetables except the mushrooms.
  • Add all ingredients to a pot.
  • Stir and bring to a boil, then simmer for 1 hour.
  • Blend or mash everything until smooth.
  • Cool slightly, then serve and enjoy!
