Autumn Comfort Soup Recipe
This hearty vegetable Autumn Soup is a comforting and nutritious dish, perfect for a cozy night in.
- 400 g tomatoes chopped
- 400 g chickpeas
- 2 carrots
- 1/2 zucchini
- 3 mushrooms
- 2 potatoes
- Seasonings of choice
- 600 ml low sodium stock
Peel and chop all vegetables.
Wash all vegetables except the mushrooms.
Add all ingredients to a pot.
Stir and bring to a boil, then simmer for 1 hour.
Blend or mash everything until smooth.
Cool slightly, then serve and enjoy!
