- 2 large eggs
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup 225 g unsalted butter softened
- 1 cup 200 g granulated sugar
- 2½ cups 310 g all purpose flour
- Optional topping powdered sugar or cinnamon sugar
Preheat the oven to 350°F or 175°C and line a baking sheet with parchment paper.
Cream butter and sugar until fluffy, beat in eggs and vanilla, then mix in flour, baking powder, and salt until a soft dough forms.
Roll dough into 1 inch balls, place 2 inches apart, and flatten slightly.
Bake for 10 to 12 minutes until edges are lightly golden and centers look set.
