Amish Harvest Casserole

Amish Harvest Casserole is a hearty, layered dish with seasoned meat, veggies, creamy sauce, and melted cheese—perfect for cozy family meals.

Ingredients
  

For the Filling:

  • 1 lb ground beef or turkey
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 medium carrots thinly sliced
  • 1 cup chopped green beans fresh or frozen
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 ½ cups cooked rice
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup milk
  • 1 tsp dried thyme
  • Salt and black pepper to taste

For the Topping:

  • 1 ½ cups shredded cheddar cheese
  • ½ cup crushed buttery crackers or breadcrumbs
  • 2 tbsp melted butter

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Brown ground beef and onion in a skillet over medium heat. Add garlic and cook 1 more minute. Drain fat.
  • Stir in carrots, green beans, and corn. Cook for 5–7 minutes until slightly tender.
  • Add rice, cream of mushroom soup, milk, thyme, salt, and pepper. Stir until well combined and heated through.
  • Spread the mixture evenly in the baking dish.
  • Sprinkle cheese over the filling. Mix crushed crackers with melted butter and sprinkle on top.
  • Bake uncovered for 25–30 minutes until cheese melts and topping is golden. Tent with foil if browning too fast.
  • Let sit for 5–10 minutes before serving. Serve warm.
