Amish Harvest Casserole
Amish Harvest Casserole is a hearty, layered dish with seasoned meat, veggies, creamy sauce, and melted cheese—perfect for cozy family meals.
For the Filling:
- 1 lb ground beef or turkey
- 1 small onion finely chopped
- 2 cloves garlic minced
- 2 medium carrots thinly sliced
- 1 cup chopped green beans fresh or frozen
- 1 cup corn kernels fresh, frozen, or canned
- 1 ½ cups cooked rice
- 1 can 10.5 oz cream of mushroom soup
- ½ cup milk
- 1 tsp dried thyme
- Salt and black pepper to taste
For the Topping:
- 1 ½ cups shredded cheddar cheese
- ½ cup crushed buttery crackers or breadcrumbs
- 2 tbsp melted butter
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Brown ground beef and onion in a skillet over medium heat. Add garlic and cook 1 more minute. Drain fat.
Stir in carrots, green beans, and corn. Cook for 5–7 minutes until slightly tender.
Add rice, cream of mushroom soup, milk, thyme, salt, and pepper. Stir until well combined and heated through.
Spread the mixture evenly in the baking dish.
Sprinkle cheese over the filling. Mix crushed crackers with melted butter and sprinkle on top.
Bake uncovered for 25–30 minutes until cheese melts and topping is golden. Tent with foil if browning too fast.
Let sit for 5–10 minutes before serving. Serve warm.
