Alfredo Lasagna Soup

This twist on classic Italian flavors offers an irresistible blend of creamy texture and savory spices, served up as a satisfying soup to warm and delight your taste buds.

Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 lb ground chicken or Italian sausage
  • 4 cup chicken broth
  • 2 cup heavy cream
  • 1 ½ cup marinara sauce
  • 8 lasagna noodles broken into pieces
  • 1 tsp Italian seasoning
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Chopped fresh basil or parsley for garnish
  • Red pepper flakes to taste, optional

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the ground chicken or Italian sausage and cook until browned, breaking it into small pieces; drain any excess fat. Add the onion and garlic, sautéing for 3–4 minutes until the onion is translucent.
  • Pour in the chicken broth, heavy cream, and marinara sauce, stirring to combine. Add Italian seasoning, salt, and black pepper. Add lasagna noodles, reduce heat, and simmer for 10–12 minutes, until noodles are tender.
  • Reduce heat to low, add Parmesan and mozzarella cheese, stirring until smooth. Garnish with basil or parsley, and serve warm.
