In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the ground chicken or Italian sausage and cook until browned, breaking it into small pieces; drain any excess fat. Add the onion and garlic, sautéing for 3–4 minutes until the onion is translucent.
Pour in the chicken broth, heavy cream, and marinara sauce, stirring to combine. Add Italian seasoning, salt, and black pepper. Add lasagna noodles, reduce heat, and simmer for 10–12 minutes, until noodles are tender.
Reduce heat to low, add Parmesan and mozzarella cheese, stirring until smooth. Garnish with basil or parsley, and serve warm.
