Addictive Pineapple Cheese Bar

Sweet pineapple and rich cheddar combine in a buttery, crumbly crust, offering a delicious taste of tropical escape.

Ingredients
  

For the layers:

  • 2/3 cup 150g salted butter
  • 1/3 cup powdered sugar (50g)
  • 1 egg yolk
  • 1/4 tsp vanilla extract
  • 1 2/3 cups all-purpose flour (200g)
  • 1/3 cup cornstarch (45g)
  • 3 tbsp milk powder (24g)
  • 18 oz pineapple jam paste (500g)

For the toppings:

  • 1 egg yolk + 1 tbsp milk
  • 1 cup grated cheddar cheese

Instructions
 

  • Sift powdered sugar into butter and mix until smooth. Add egg yolk and vanilla, mixing well.
  • Sift flour, cornstarch, and milk powder; combine with the butter mixture.
  • Divide the dough into two equal parts, place each in a square plastic bag, and roll thin.
  • Roll the pineapple jam paste thinly in a separate square plastic bag.
  • Layer dough, pineapple filling, and another layer of dough.
  • Cut into bite-sized squares. Brush the top with the egg yolk and milk mixture, then sprinkle with cheddar.
  • Bake at 320°F (160°C) for 20-25 minutes until golden brown. Let cool, serve, and enjoy!
