30 Minute Chicken And Broccoli
Juicy chicken combined with crisp broccoli in a savory sauce beats takeout any day, plus it’s budget-friendly!
Chicken marinade:
- 1 lb skinless, boneless chicken breast or chicken thighs
- 1 tbsp soy sauce
- 1.5 tbsp cornstarch
- ½ tbsp baking soda
- ¼ tsp black pepper
- 2 tsp vegetable oil
- 1 tsp sesame oil
Stir fry sauce:
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 2 tsp sugar
- 2 tsp Shaoxing wine or rice vinegar
- 1 tbsp cornstarch
- ½ cup chicken stock
Stir fry:
- 1 large broccoli crown chopped into florets
- 3 cloves garlic minced
- ½ inch ginger peeled and sliced
- 1 tbsp vegetable oil
- ¼ cup water
Slice chicken thinly against the grain; marinate for 15 minutes.
Mix all sauce ingredients in a bowl and set aside.
In a heated pan with oil, cook chicken until done; remove from pan.
Add ginger, garlic, broccoli to the pan; add water and cook until broccoli is bright green.
Push broccoli to the side; pour in the sauce, simmer until thick.
Add cooked chicken, toss everything together, and serve!
